Community Wide Group Run

August 20; 6:30 p.m.

The Charleston Area monthly Community Wide Group Run continues on the third Thursday of every month. This month we’ll be starting out at the Charleston Harbor Fish House & Marina at 6:30 p.m. on Thursday, August 20. Come out and join us for a 3- or 5-mile route, then head to the Reel Bar for a cold beverage.

This is a chance for the many running groups in our community to get together and enjoy fellowship, fun, and fitness in unity.  Come out and meet some new faces, see some new places!!

Dear Friends and Members,

August is upon us – and that signals the closing of summer.  The kids are heading back to school, but why not do some back-to-school shopping of your own and join us for a shopping spree!?  See below for information about our Athleta shopping party.

Our new space is about to undergo a facelift – although nothing much will change on the outside, the inside at 1558 Ben Sawyer will take on a whole new look.  We’re about to begin tearing down walls, raising the ceiling, and changing up the flooring in our new home. Keep checking our Facebook page for photos chronicling our progress!

And keep reading – there’s lots to say this month!

While somewhere in a far off land that may be reality, here on planet Earth, it’s not. Staff Recipe File – from Sarah’s kitchen!
Grilled BBQ Chicken, Zucchini and Corn Quinoa Salad

Servings: 4

Ingredients

  • 1 cup quinoa, rinsed
  • 1 3/4 cups water or broth
  • 1 pound boneless and skinless chicken breasts or thighs
  • salt and pepper to taste
  • 1/2 cup bbq sauce
  • 1 pound zucchini, quartered lengthwise
  • 2 ears corn
  • 1/4 cup feta, crumbled
  • 1/4 cup green onions
  • 2 tablespoons cilantro, chopped
  • 1/4 cup bbq sauce

 

Directions

1. Bring the water and quinoa to a boil, reduce the heat and simmer, covered, until the quinoa is tender and has absorbed the water, about 15 minutes, remove from heat and let sit for 5 minutes, covered.

2. Season the chicken with salt and pepper to taste and grill or pan fry it over medium-high heat until cooked through and lightly golden brown, about 4-6 minutes per side, before setting aside to cool, slicing and mixing in the BBQ sauce.

3. Grill the zucchini and the corn until cooked and slightly charred, about 2-3 minutes per side.

4.  Cut the corn from the cob, assemble veggies and chicken over quinoa, and enjoy!

Extra BBQ sauce may be added as “dressing,” and try adding flavorful garnishes such as feta, cilantro, and scallions!

Note:  Careful with the BBQ sauce – watch out for high sodium brands!  Or try making your own with this recipe for a low-sodium Brown Sugar BBQ sauce.
